What You'll Need

2 cups leftover risotto

1 ½ cups shredded mozzarella cheese

4 cups leftover marinara sauce, for serving

Fresh basil or parsley, for serving

Olive oil spray

1 cup all-purpose flour

2 teaspoon garlic powder

1 teaspoon onion power

6 large eggs, beaten

2 cup Italian seasoned breadcrumbs

1 cup grated parmesan cheese

Salt and pepper

What To Do
  1. Preheat Bella Digital Air Convection Fryer to 400˚F
  2. Start rolling out a teaspoon of risotto in your hand. Cover the small ball with the mozzarella and then top off with more risotto. Roll once more until firmly packed balls are formed
  3. Set up a 3-bowl breading station:
    • Flour, garlic powder, onion powder, salt, and pepper
    • Whisked eggs
    • Italian breadcrumbs and parmesan cheese
  4. Carefully roll each rice ball into the seasoned flour and shake off any excess. Then, roll in the egg and finish off in the breadcrumbs. Repeat the 3-breading steps with each arancini
  5. Add 8-10 arancini balls to the air frying basket
  6. IMPORTANT: Do not overcrowd the frying basket to allow air circulation on all sides of the arancini. This will ensure even browning and crispiness
  7. Spray rice balls with olive oil to help with the browning
  8. Cook for 10 minutes and turn halfway through.
  9. Serve on top of tomato sauce and garnish with basil or parsley.
