What You'll Need
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp each baking soda and paprika
  • 1/4 tsp each salt and pepper
  • 1 egg
  • 1/4 cup buttermilk
  • 2 tbsp butter, melted
  • 1 cup leftover mashed potatoes
  • 2 tbsp butter, melted
  • 1/3 cup shredded aged Cheddar Cheese
  • 1/4 cup chopped cooked bacon
  • 2 green onions, finely chopped
  • 1/2 cup sour cream, for serving
What To Do
  1. Condition and preheat BELLA Rotating Waffle Maker.
  2. In large bowl, whisk together flour, baking powder, baking soda, paprika, salt and pepper. In separate bowl, whisk together egg, buttermilk and melted butter; whisk in mashed potatoes until smooth. Stir mashed potato mixture into flour mixture; do not over mix. Fold in Cheddar, bacon and green onions.
  3. Scoop enough batter into lower cooking plate to cover about two-thirds of the grid surface. Close lid; turn the temperature control setting to MEDIUM (4) and bake for 5 minutes.
  4. When waffle is cooked, the top cooking plate should lift easily. (Lift the plate gently; if it pulls, continue cooking for 1 minute and test again)
  5. Repeat with remaining batter. Serve waffles with sour cream.
