Beef Jerky


What You'll Need

1 ½ lbs top round beef, thinly sliced (approximately
1/8 inch)
1/3 cup tamari or soy sauce
1/3 cup worcestershire sauce
1 tablespoon ground coriander seed
1 tablespoon ground fennel seed
1 tablespoon white peppercorns
½ teaspoon chili flakes
Zest of one lemon

What To Do

1. In a large bowl, mix the tamari and worcestershire with spices and lemon zest to make a marinade. Add in the sliced beef and mix well; allow 3-4 hours to marinate. Remove meat from marinade and pat well with paper towel to remove as much moisture as possible.
2. Transfer onto BELLA 10.5QT Air Convection Fryer Oven Dehydrator perforated sheet pans; place into the product. Select the DEHYDRATOR function (125°F for 4 hours). Jerky is done when it has a leathery appearance with minimal give to the touch.
Chef’s note: The thicker the beef, the longer the dehydrating process – you may need to adjust your time depending on the thickness and texture of the meat; it may be worth having your butcher thinly slice the beef for you ahead of time.
