What You'll Need
  • 1 whole chicken
  • 1 cup pineapple juice
  • 1 cup barbecue sauce
  • 1/2 cup water (approx.)
  • 2 tbsp fresh lime juice
  • 1 clove garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1 tsp pepper
  • 3 tbsp cornstarch
  • 12 corn tortillas

Toppings:

  • 1 1/2 cups diced fresh pineapple
  • 1 cup diced red onion
  • 1 cup crumbled feta cheese
  • 1/2 cup pickled jalapeno peppers (optional)
  • 1/4 cup chopped fresh cilantro
What To Do
  1. Add chicken, pineapple juice, barbecue sauce, 1/2 cup water, lime juice, garlic, chili powder, cumin, salt and pressure to the BELLA pressure cooker
  2. Cover and lock into position
  3. Cook on PRESSURE COOK for 30 minutes
  4. Use the spatula to move the steam release valve, carefully remove lid, allowing steam to escape away from you
  5. Carefully remove chicken; set aside until cool enough to handle
  6. Remove and discard skin; separate meat from bones and shred; set aside
  7. Whisk cornstarch with 6 tbsp water in the BELLA pressure cooker
  8. Press SAUTE, whisk cornstarch mixture into sauce and simmer for 5 minutes or until thickened
  9. Add chicken; mix to coat well
  10. Spoon into tortilla and add toppings: pineapple, red onion, feta, jalapeno
  11. Top with cilantro
