What You'll Need

Coconut Popcorn Shrimp:

  • 1 lb peeled deveined shrimp, tails removed (31/40 count)
  • 1/2 tsp each salt and pepper
  • 1/3 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/4 cups panko bread crumbs
  • 1/2 cup unsweetened shredded coconut
  • Vegetable oil spray

Spicy Cocktail Sauce:

  • 1/2 cup ketchup
  • 1/4 cup prepared horseradish
  • 2 tbsp lime juice
  • 4 tsp sambal oelek hot sauce
  • 2 tsp honey
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, minced
  • 1/4 tsp each salt and pepper
What To Do

Preheat Bella Air Fryer to 400˚F.

Coconut Popcorn Shrimp: Season shrimp with salt and pepper. Place flour in shallow plate. Place eggs in separate plate. In another plate, combine bread crumbs and coconut. Dredge shrimp first in flour, then in eggs, then in bread crumb mixture until well coated.

Place in basket of Bella Air Fryer and spray with vegetable oil spray. Air fry, shaking basket halfway through cooking time, for about 10 minutes or until golden brown and cooked through.

Spicy Cocktail Sauce: Whisk together ketchup, horseradish, lime juice, hot sauce, honey, Worcestershire sauce, garlic, salt and pepper. Serve with shrimp for dipping.

Tips:

  • Substitute sriracha hot sauce for sambal oelek if desired.
  • Alternatively, serve with your favorite peanut sauce instead of cocktail sauce.
