What You'll Need
  • 12 eggs
  • 1/3 cup mayo
  • 2 tbsp relish
  • 1 tbsp whole grain mustard
  • Salt and pepper to taste
  • 1 red beet peeled and cubed (wear rubber gloves)
  • 2 cups of water
  • 1 cup white vinegar
  • Thinly sliced cucumber for garnish
What To Do
  1. Place cubed beets in a medium saucepan with water and vinegar, bring to a boil
  2. Reduce heat, cover and simmer for 15 minutes
  3. Remove from heat and set aside to cool
  4. Place eggs into the BELLA Pressure Cooker
  5. Set to pressure cook for 6 minutes
  6. Release pressure, remove lid and plunge eggs into iced water for 20 seconds
  7. Peel the eggs and slice a small piece off the bottoms so that they stand upright
  8. Slice the top third off of each and save the tops
  9. Carefully remove the egg yolks with a small spoon
  10. Combine the yolks with mayo, relish, mustard and salt and pepper to taste
  11. Place the egg whites and their tops in the pan with cooled beets and liquid
  12. Let stand for 15 minutes
  13. Gently pipe or scoop the yolk mixture inside the egg whites and garnish
  14. Serve immediately or keep in the fridge until ready to serve
