What You'll Need
- 2 russet potatoes, grated
- 1 small yellow onion, finely chopped
- 1 egg, lightly beaten
- 1/4 cup freshly chopped parsley
- 2 tablespoons melted butter
- 1 teaspoon thyme leaves
- Salt and pepper
What To Do
- In a large bowl, add all of the ingredients and mix well.
- Preheat the Panini maker.
- Cook the hash browns in batches.
- Mound the potato mixture by the spoonful on to the grill.
- Close the lid and cook for 5 to 7 minutes or until crispy.
