Mac N Cheese Bites

What You'll Need

Cook and prep time: minimum 3 hours

Makes approximately 26-30 pieces

700mls (3 cups) milk

3 tablespoons butter

4 tablespoons plain flour, sifted
salt

Freshly ground white pepper

Freshly ground nutmeg

2 tablespoons tomato paste

5 cups cooked elbow macaroni

1 tablespoon chopped fresh rosemary

½ cup grated Parmesan cheese

Crumbing

3 eggs, beaten with ¼ cup water

1 cup all purpose flour

2 cups panko breadcrumbs

½ cup grated Parmesan cheese

½ teaspoon salt

What To Do

1. Bring the milk to a boil and set aside

2. Over a gentle heat melt the butter. Once melted, add the flour, stirring thoroughly with a wooden spoon. Cook for approximately 2 minutes stirring constantly then remove from heat and set aside.

3. Whisk the hot milk over the cooked butter and flour, continuing to stir until the sauce boils and thickens

4. Season with white pepper and nutmeg , continue to simmer for 10 -15 minutes mixing frequently. Remove from heat.

5. Add in salt, tomato paste, chopped rosemary, pasta and mix well and allow to cool for 20 minutes

6. Pour onto a sheet pan, push down into a 1inch thick slab and refrigerate for at least 2 hours, or till well chilled and firm

7. Grease fryer basket from the BELLA AirPro Cook and Fry with OptiPot Technology

8. Cut chilled mac and cheese into one inch cubes. Mix together panko, Parmesan cheese and salt on a large plate.

9. Gently roll macaroni bites in the flour, dusting off any excess, dip in egg wash, evenly coating and then roll in panko mixture, making sure all sides are coated. Place back into refrigerator for 20 minutes to firm up

10. Lightly spray bites with cooking spray, cook in a couple of batches so you don’t crowd the air fryer

11. Cook bites at 400°F for 20 minutes, remove from the air fryer and serve
