ORECCHIETTE WITH GARLIC, CHILI AND BRAISED BEEF
1 lb orecchiette pasta, cooked to al dente, drained and cooled
2 tablespoons olive oil
4 cloves of garlic, finely sliced
1/4 teaspoon chili flakes
3 cups braised beef with red wine sauce*
1/2 cup sour cream
1 large bunch of arugala (washed), stems removed and shredded
1/2 cup freshly grated Parmesan
1. Warm olive oil and garlic over medium heat in your BELLA Copper Titanium Skillet.
2. When the garlic starts to take on color, add in the chili along with the beef in red wine sauce (see recipe for Beef with Red Wine Sauce*).
3. Once boiling, add in the orecchiette and continue to cook until hot. Lower the temperature, add in the sour cream and arugala. Mix well and sprinkle with Parmesan; serve.
