What You'll Need
  • 1/2 lb carrots, peeled and cut into chunks
  • 4 beets, sliced into 1/4 inch rounds
  • 3 potatoes, peeled and cut into 1 inch chunks
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 1 head of garlic, top 1/2 inch trimmed and 2 cloves reserved
  • 1 lemon, sliced into 1/4 inch rounds, 2 sliced reserved
  • 1 tsp thyme
  • Fresh ground pepper
  • 3 tbsp olive oil
What To Do
  1. Preheat oven to 375°F/190°C
  2. Place 2 cloves of garlic, 2 slices of lemon, thyme and the olive oil into the jar of a BELLA blender
  3. Blend for a few seconds until just combined
  4. Place vegetables, garlic head and lemon slices into a roasting pan
  5. Pour lemon and oil mixture over vegetables, season with fresh pepper to taste
  6. Bake for 45 minutes until vegetables are tender and browned, stirring occasionally
