What You'll Need
  • 4 stalks fresh asparagus, blanched
  • 4 slices thick rye bread
  • 1 ounce smoked salmon
  • 2 ounces Saint-Andre or other soft ripened cheese
  • Freshly ground black pepper
What To Do
  1. With a vegetable peeler, peel the asparagus lengthwise.
  2. Lightly toast the bread.
  3. Spread each toast with cheese.
  4. Top with sliced smoked salmon and some of the asparagus.
  5. Sprinkle with black pepper.
