What You'll Need
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 1/2 lb. ground turkey
- Vegetable oil cooking spray
- 1 bell pepper, seeds removed and chopped
- 1 28-ounce can fire roasted diced tomatoes
- 1 15-ounce can red kidney beans, drained
- 1 15-ounce can white beans, drained
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground cumin
- 1 cup chicken stock
- 1 jalepeno, seeds removed and chopped
What To Do
- In a large skillet, heat the oil over a medium heat.
- Add the onion and cook for 5 to 7 minutes or just until wilted.
- Add the turkey and stir with a wooden spoon until the meat is crumbled and no longer pink.
- Spray the interior of the slow cooker with the vegetable spray.
- Add the turkey mixture to the slow cooker.
- Top with the pepper, beans, chili powder, cumin, and stock.
- Set the slow cooker for 4 hours on low.
- Serve garnished with the chopped Jalepeno.
