What You'll Need
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 1/2 lb. ground turkey
  • Vegetable oil cooking spray
  • 1 bell pepper, seeds removed and chopped
  • 1 28-ounce can fire roasted diced tomatoes
  • 1 15-ounce can red kidney beans, drained
  • 1 15-ounce can white beans, drained
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cumin
  • 1 cup chicken stock
  • 1 jalepeno, seeds removed and chopped
What To Do
  1. In a large skillet, heat the oil over a medium heat.
  2. Add the onion and cook for 5 to 7 minutes or just until wilted.
  3. Add the turkey and stir with a wooden spoon until the meat is crumbled and no longer pink.
  4. Spray the interior of the slow cooker with the vegetable spray.
  5. Add the turkey mixture to the slow cooker.
  6. Top with the pepper, beans, chili powder, cumin, and stock.
  7. Set the slow cooker for 4 hours on low.
  8. Serve garnished with the chopped Jalepeno.
