STIR-FRIED SZECHWAN BEEF WITH WHITE ASPARAGUS
9 oz tender beef (rump or loin)
1 teaspoon Szechwan peppercorns (lightly roasted and crushed to a powder)
1 tablespoon fish sauce
2 tablespoons olive oil
3 cloves garlic, thinly sliced
6 spears white asparagus, blanched until tender and cooled
7 spears fresh green asparagus, finely sliced
2-3 tablespoons sweet chilli sauce
1 long red chilli, deseeded and finely sliced
1/2 cup fresh mint leaves
1/2 cup fresh coriander leaves
1. Slice the meat into thin bite-sized pieces. Place into a bowl with ground pepper and fish sauce.
Mix and allow to sit for ten minutes before cooking.
2. Heat oil in the BELLA 10” Copper Titanium Fry Pan and fry garlic until golden.
Add beef and stir-fry for 30 seconds. Toss in asparagus and continue stir-frying.
3. Add sweet chilli sauce and a squeeze of lime juice. Reduce the heat, add fresh chilli, herbs and serve.
