Thanksgiving “Morning After” Waffle

What You'll Need

3 large eggs, yolks and whites separated (room temperature)
1 cup milk
2 tablespoons melted butter
2 cups leftover mashed sweet potatoes
1 ½ – 2 cups all-purpose gluten-free flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
Pinch of ground nutmeg
½ cup shredded turkey meat

What To Do
  1. In a large mixing bowl, lightly beat the egg yolks with the milk; add in melted butter. Mix in the sweet potato until well combined; sift in the flour, spices and baking powder
  2. In a separate bowl using a clean whisk, whip the egg whites into soft peaks; gently fold egg whites into the sweet potato batter; add shredded turkey
  3. Add batter into your BELLA Copper Coated Waffle Maker and cook till golden, approximately 2–3 minutes. Serve with a fried egg
